Barley soup

Barley soup is a warming autumn classic that is easy to prepare and has a hearty taste.

Barley soup is one of the region's traditional autumn dishes and impresses with its simplicity and versatility. Barley, a typical regional grain, forms the basis for this nutritious and warming soup. Barley soup is particularly popular at parties, as it is easy to prepare and can be kept warm for a long time - perfect if guests arrive at different times.


Ingredients (for approx. 8-10 people):

1 large onion
3-4 Carrots
1 large leek
little Roasting butter
200 g Rolled barley/barley barley
3 l Vegetable bouillon
approx. 3 tsp. Salt
approx. 300 g "Ripple" (smoked smoked pork loin or kidney), finely diced
200 ml Half cream


Preparation:

Finely chop the onion, dice the carrots, quarter the leek lengthwise and cut crosswise into thin strips.

Heat the butter in a large soup pan. Add the onion, carrots and leek and sauté for a few minutes.

Add the barley and cook briefly. Then add the stock, season with salt and bring to the boil.

Add the diced meat, reduce the heat, cover and simmer for approx. 2 hours.

Add the cream, season if necessary.


Vegetarian version:

Of course, the meat can be omitted from the barley soup. It can also be replaced with dried tomatoes, peppers or dried pears.
